Some of my favorite childhood memories took place in the kitchen, baking up a storm, but as the temperature outside climbed the desire to turn on the oven plunged. I have the solution to all of your problems; check out these easy no-bake sweet treats recipes you and your little ones are sure to love!
Sweet Treat Recipes
Cake Batter Truffles
- 1-1/2 cups of flour
- 1 cup of yellow cake mix
- 1/2 cup of unsalted butter, softened
- 1/2 cup of white sugar
- 1 teaspoon of vanilla extract
- 1/8 teaspoon of salt
- 3 tablespoons of milk
- Package of sprinkles
- 12 oz. package of white candy melts
- Pop-sticks
For the truffles, begin by beating the butter and sugar with an electric mixer until combined. Add the remainder of the dry ingredients and vanilla extract and mix again. Repeat the mixing process after adding the milk, the now cookie dough like consistency should allow you to incorporate a tablespoon of sprinkles by hand. Roll the dough into 1 inch balls and place on lined cookie sheet, refrigerate for 20 minutes or until firm.
For the coating, melt the package of candy melts following the directions on the package using the microwave.
Remove the cake batter truffles from the refrigerator. Using a pop-stick, a fork will work as a substitute, dip each truffle into the candy chocolate coating, and place back on the cookie sheet. Once all have been coated, add sprinkles as desired and place back into the refrigerator until you’re ready to serve. This recipe should create 24-30 truffles.
Banana Split Bites
- 3 Bananas
- 1/4 pounds of cored pineapple
- 6 strawberries
- 1 cup of dipping chocolate
- 1/4 cup chopped peanuts
- 12 pop-sticks (or skewers)
Begin by cutting strawberries in half and then cut equal size pieces of pineapple and banana. Place pineapple on a pop-stick or skewer followed by the bananas and strawberries, and then freeze for ten to fifteen minutes. While the fruit is in the freezer, melt the chocolate by heating in microwave-safe bowl for 30 seconds, stirring and repeating until the chocolate is melted and smooth. Remove fruit from freezer and dip one side in chocolate. Once coated in the chocolate, sprinkle with chopped nuts, chill and enjoy!
Frozen Lemon Bars
- 12 whole graham crackers
- 4 tablespoons of melted butter
- 1 1/4 of cup sugar
- 4 eggs
- 1 cup of lemon juice
- Lemon zest (from 2-3 lemons)
- 1/2 cup of butter, melted
- Powdered sugar for garnish
In food processor or blender, pulse graham crackers until they are fine crumbs. Add in 1\2 of the melted butter and continue pulsing until it begins to form into a dough-like consistency. Push into flat layer in the bottom of 9×9 pan and refrigerate for 30 minutes. While the crust is being refrigerated, combine sugar, eggs, lemon zest, lemon juice and the remainder of melted butter. Microwave this mixture on high in one-minute increments, stirring after each, repeat 5 times or until thickened. Spoon the lemon curd mixture on top of graham cracker crust, top with a dusting of powered sugar and freeze for three hours until firm.
